Ingredients:
- 1 pound fresh sliced kumquats, seeds discarded
- 1 1/2 cups sugar
- 1/4 cup water
- 1 tablespoon lemon zest
In a medium saucepan combine kumquats, sugar, water. Bring to a boil stirring to dissolve sugar. Add lemon zest, reduce heat and simmer until peel is translucent. About 30 minutes.
Cool.
